I spent 20+ years in kitchens across Venezuela, Panama, Belize, the United States, Iceland and Sweden. I saw the LatAm operator's problem up close: profitable kitchens destroyed by lack of control, not talent.

That's why I founded Broken Table Hospitality and built COSTIQ: we're not an agency, we're operators building tools for operators.
